Five lip-smacking, multicultural dishes for overnight guests by celebrity Chef Ranveer Brar

Atithi devo bhava, or ‘One should treat guests like God, ’ has been an Indian belief since times immemorial. The saying shows how much warmth and value guests bring to our life.

In a family-centric country like ours, we go the extra mile to make our loved ones feel at home when they visit or stay over. And they do the same for us! One long-established way of showing our love and respect for others is through the dishes we cook for them.

To make sure your guests leave with a smile on their face, celebrity chef Ranveer Brar, in collaboration with Home Centre, has added his unique touch and curated some delectable dishes. So, here are five sumptuous dishes that are easy to cook and will leave your guests impressed!

1. Nadan Kozhi Varuthathu

Also known as Kerala-style spicy fried chicken, this south Indian dish is protein-rich, melt-in-the-mouth, and quick. It takes less than 30 minutes to cook and is usually served as an appetizer. But it can also be a part of the main course and served alongside rice or roti. Kerala has always been considered the Land of Spices, so this dish can satiate guests who have a palate for spicy and savoury food. While preparing Nadan Kozhi Varuthathu, you can use a contemporary and transparent mixing bowl. It will help you view the ingredients and assess the consistency of your marination. Serve the ready to eat dish on a traditional banana leaf, and you are good to go!

2. Patishapta Pitha

Who doesn’t have a sweet tooth? This traditional Bengali sweet dish will mesmerise even the staunchest of non-sweet-eaters. Originally made for the festival of Makar Sankranti, Patishapta pitha can also serve as a fantastic post-meal dessert. It has a pancake-like dough with tempting fillings such as jaggery, coconut, kheer, mango, mawa, and the like. Moreover, since it is home-made, it can be tuned to be healthy. You can keep the oil to a minimum without running the risk of burning the sweet by using a classic dosa tawa that ensures even heat distribution due to its non-stick surface.

3. Chicken Banh Mi

Banh mi is a catch-all term for all kinds of Vietnamese sandwich bread. Most are shaped like a baguette but are much airier than bread found elsewhere, making it apt for ample fillings. Banh mi is loaded with nutritional benefits. It has zero trans (unhealthy) fats, is high in fibre, and has good amounts of potassium and calcium. Add chicken, veggies, and other fillings, and you get the ultimate taste-infused power food. The best way to make a chicken banh mi sandwich is on a non-stick fry pan. Even better if the frying pan is ceramic with a colourful, chic finish, quick-to-clean, and stain-free.

4. Ojingeo Muchim

For guests who have a penchant for the sweet and salty, nothing can beat the Korean Ojingeo Muchim. This tangy, sweet-n-sour dish is essentially a spicy dried squid and can be served in the form of strips or a salad with veggies to complement it. Ojingeo Muchim is refreshing and addictive and can be a side snack or a part of the main course itself. Moreover, it is protein-rich and contains nutrients such as Omega-3 fatty acids, vitamin B6 and B12, and selenium. However, you can unpack most of Ojingeo Muchim’s health benefits by frying it in less oil. Use attractive serve ware and less oil to keep your guests coming back for more!

5. Khmer Curry

Khmer curry, also known as Cambodian curry, is an eclectic flavour-infused curry dish. You can make the curry with chicken and vegetables and add garnishes of your choice. It is less spicy than the dishes of their Asian counterparts. You can serve Khmer curry with practically anything – rice, roti, even bread. It has the dual advantage of being delectable and healthy and is the perfect main course dish to serve to your guests. However, making it can be time-consuming. To speed up the process, you can use a multi-utility vegetable chopper.
